About
Pierre Troisgros was a French chef and restaurateur whose career helped reshape 20th-century haute cuisine. Together with his brother Jean, he took over the family restaurant and transformed it into Les Frères Troisgros, a benchmark establishment that earned three Michelin stars — a distinction Pierre never lost once he attained it. The restaurant became one of France’s most celebrated, known for precise technique and the lightness of its preparations.
Among his most notable contributions is the creation of the famous dish Escalope de saumon à l’oseille, prepared in an innovative way on a nonstick skillet with a reduced sauce finished with a touch of cream, which signaled a break with classical practices and a pursuit of cleaner flavors. In the 1960s Pierre and colleagues such as Paul Bocuse and Michel Guérard were identified as pioneers of nouvelle cuisine, a movement that favored lighter dishes, more natural presentation, and an emphasis on ingredients.
The Troisgros family combined tradition and innovation across generations: his son Michel joined the restaurant in the 1980s, and the culinary line remains active. Pierre’s legacy endures in his lasting influence on contemporary chefs and in the establishment’s status as a landmark of French gastronomy.
